Garlic & Onion โ€“ This two healing combo is the must -have in a great curry. I love to first soften the onion and then add garlic. You can use any onion you have at home if it’s white, or red.

Zucchini – Zucchini is oneย  of the multiple vegetables, and it is perfect to add in this dish. Zucchini has a great benefits for us, for instance help to lose weight, improves immunity and keep our brain happy and healthy.

Chicken breast โ€“ chicken breast are great to use for this curry dish. They are a great source of protein, also they protect our immune system and help to keep cancer away. If you like to make this dish vegan, you can see here guide to swap chicken.

Coconut milk โ€“ mostly coconut milk is using in every curry dish to balance the spice hot.

Tomato pure โ€“ Tomato pure bring all ingredients good together. If you don’t have one at home, you can swap this ingredient for vegetables stock.

Ginger โ€“ Ginger is one amazing ingredient. Ginger can help prevent cancer, treats flatulence, reduces nausea and has anti-inflammatory properties.

Curry paste โ€“ I used red-hot curry paste. This is optional if you don’t like to spice food, you can still buy curry paste without spice.

Peanut butter โ€“ This dish is special for a great nuts flavor. I like to use peanut butter to set a good nuts touch. The other great option is almond butter.

Don’t forget to add Salt & Pepper !

Ingredients
  

  • 1 clove Garlic
  • 1 medium Onion
  • 1 large Zucchini
  • 500 gram Chicken breast
  • 1 can Coconut milk
  • 1 can Tomato puree
  • 1 small Ginger
  • 1 tbsp Olive oil
  • 2 tbsp Curry paste
  • 1 tbsp Peanut butter
  • 1/2 cup Parsley
  • Salt & Pepper

Instructions
 

  • Sliced onion, garlic zucchini and chicken in smaller squares.
  • In wok heat olive oil add onion and simmer around 3 minutes then add garlic with chicken breast and let simmer for 5 minutes, then add ginger, curry paste, peanut butter salt & pepper and mix till everything combine, then add tomato pure and coconut milk. Bring to boil, then turn heatto lower and let cooked 20 -25 minutes.
  • Serve with rice and fresh parsley on top.
