This Vegan Jack fruit salad is my lately obsession. The combination of Jack fruit with sweet peach and crunchy green beans is so tasty. This recipe is great for hot summer days. Plus, Jack fruit has great healthy benefits for our body.

We love this jack fruit salad because it’s easy and so tasty. Jack fruit becomes lately really popular, its plant-based replacement for meat. It’s used in curries, tacos, sandwiches because it has a mild flavor is a great to cooked with. I used Jack fruit in refreshing Buddha bowls salad.

How to make Jack fruit salad recipe
In pan heat olive oil, add Jack fruit, green beans sliced peach, soy sauce, pressed garlic and chopped onion. Simmer around 5 to 10 minutes. Meanwhile, sliced lettuce, cucumber, and scallions in small.
In a large bowl place chickpeas and with a fork messed them. Then add lettuce, cucumber, scallions, and Jack fruit mixture. Top with some nuts and extra peach on top. Enjoy!

- 200 g Jack fruit
- 1 tbsp Olive oil
- 1 cup Green beans
- 1 large Peach
- 1 tbsp Soy sauce
- 1 clove Garlic
- 1 medium Onion
Salad
- 1 cup Chickpeas
- 2 cups Lettuce
- 1 medium Scallions
- 1 small Cucumber
Topping
- 1 tbsp Nuts of your choice
