Ingredients
For the Chicken
- 2 chicken breasts
- 1 tbsp red pepper powder
- 2 tbsp olive oil
- Salt and black pepper to taste
For the Green Salad Dressing
- 1 cup fresh spinach
- 1/4 cup parsley
- 1/2 juice lemon
- 1/3 cup olive oil
- 2 cloves garlic pressed
- 1/4 cup ice-cold water
- 1/4 cup Parmesan cheese grated
For the Bread Crumbs
- 2 sliced bread or half a baguette
- 2 tbsp olive oil
- 1 clove garlic pressed
- 2 tbsp Parmesan cheese grated
- 1 tbsp red pepper powder
For the Salad
- 1 head lettuce of your choice, sliced
- 1 cucumber sliced
- 2 tomatoes chopped
- 1 red onion thinly sliced
- 1/2 cup green olives
Instructions
- In a bowl, combine 1 tsp red pepper powder, 2 tbsp olive oil, salt, and black pepper. Add the chicken breasts, ensuring they are well coated. Let them marinate for at least 15 minutes. Heat a pan over medium heat. Add the marinated chicken and cook until golden brown on both sides and cooked through. Remove from heat and let it rest before slicing.
- In a blender, combine 1 cup spinach, 1/4 cup parsley, lemon juice, 1/3 cup olive oil, 2 pressed garlic cloves, 1/4 cup water, and 1/4 cup Parmesan. Blend until smooth. Adjust seasoning if needed.
- Preheat your oven to 350ยฐF (175ยฐC). Cut the bread into small cubes. In a bowl, mix bread cubes with 2 tbsp olive oil, salt, black pepper, 1 pressed garlic clove, 2 tbsp Parmesan, and 1 tsp red pepper powder. Spread on a baking sheet and bake until golden brown, about 10-15 minutes.
- In a large bowl, combine sliced lettuce, cucumber, tomatoes, red onion, and green olives. Add the sliced grilled chicken and baked bread crumbs.
- Drizzle the green salad dressing over the salad, toss gently to combine, and serve immediately.
