Rainbow veggie sandwich
This Rainbow veggie sandwich is so tasty. I love to include a lot of different colors from vegetables and fruits into my daily diet, because variety keeps things interesting. Honestly, this sandwich is one of the reason why I love plant-based food. The creamy peanut butter spread with the combination of fresh grilled baguette and a lot of beautiful veggies color make this sandwich so amazing.

Colors can make us feel better in so many ways mentally, psychically and also every color has differs health benefits for our body. So, letโs look deeper in each color. White food help our immune system, lower cholesterol and help to keep our heart healthy. Yellow food protect our eyes, help immune system. Red food keep our blood vessels healthy and protect our skin. Purple food improve our memory and keep us looking younger. Green food protect stomach and keep our bones healthy.

How to make Rainbow veggie sandwich
Peanut butter spread-In small bowl add olive oil, soy sauce, sriracha, pressed garlic, and peanut butter, mix well until all combine then set aside. Sliced baguette or sandwich in half and optional, you can grill it in toaster for 5 minutes or baked in oven at 180C for 10 minutes.
Prep your veggies- Peel carrots and cucumber. Sliced tomatoes, yellow pepper, red onion and red cabbage in smaller pieces.
Start making your baguette. On top and bottom of your baguette spread peanut dip, then start layering. Place cucumber, tomatoes, red onion, yellow pepper, carrots, Lambโs lettuce. Enjoy!

- 1 cucumber
- 2 Tomatoes
- 1 Yellow pepper
- 1 Red onion
- 1/2 Red cabbage
- 1 cup Lambโs lettuce
Peanut butter spread
- 2 tbsp Peanut butter
- 2 tbsp Olive oil
- 1 tbsp Soy sauce
- 1 tbsp Sriracha
- 1 clove Garlic
