We love this Sweet potato salad because itโs easy to make, and it tastes so yummy. In this recipe, I used Mediterranean vegetable all-rounder from Just Spices. I was really surprised from this seasoning. I am a huge fun from just spices brand and I have to say this one is going to be one of my favorite. How to make Sweet potato salad
Preheat oven at 180 C. In a small pot, cooked red lentil in salt water for 10 minutes, or until red lentil is cooked trough.
Meanwhile, sliced sweet potatoes with red pepper in small squares then sliced red onion in 1/3. In a bowl mix sweet potato with red pepper onion and season with Salt, Pepper, Mediterranean vegetable all-rounder mix and olive oil. Place it on baking paper and baked for 40 minutes at 180C.
In a small bowl, add arugula with cooked red lentil and top with baked sweet potato. Top with some parsley and enjoy.

- 1 cup Red lentil
- 2 tbsp Mediterranean vegetable all-rounder
