Warming peas soup with aromatic goat cheese

Ingredients
  

  • 1 cup Peas, frozen or fresh
  • 1 cup Leek
  • 1 cup Potatoes, peeled and cut in cubes
  • 2 cup Vegetable broth
  • 2 tbsp Butter
  • ½ cup Goat cheese
  • 1 Garlic
  • ½ tbsp Nutmeg

Instructions
 

  • In pot melt butter over medium heat. Add leek with salt and let stir for 5 minutes until leek have softened but don't take any color.

  • Press garlic and let stir for 1 more minutes.
  • Add peas, potatoes, nutmeg, salt, pepper and Vegetable broth. Let cook over medium heat 20 minutes. 
  • Poor soup in high speed blender, add goat cheese and blend till smooth. 
  • Poor soup in your bowl and garnish with spring onion, nuts and some extra goat cheese.

Notes

Can you change cheese:
Yes, if goat cheese is too aromatic for you, the alternative is cheddar or Gorgonzola cheese.
