Ingredients
  

  • 2 tbsp Butter
  • 1 tbsp Olive Oil
  • 2 large White Onions thinly sliced
  • 1 large Red Onion thinly sliced
  • 2 cloves Garlic thinly sliced
  • 1/2 cup Red Wine
  • 1 tbsp Fresh Thyme
  • 4 cups Vegetable Stock
  • Salt and Pepper
  • 1 cup Cheese Gruyère or Swiss
  • 1 Baguette

Instructions
 

  • In a large pot, melt butter with olive oil over medium heat. In a large pot, melt butter with olive oil over medium heat. Stir in the garlic and cook for another 2 minutes.
  • Pour in the red wine and let it cook until the wine has almost completely evaporated. Sprinkle in the thyme. Then add the vegetable stock. Bring to a simmer and cook for about 20 minutes. Season with salt and pepper.
  • Meanwhile, toast the baguette slices until they are golden brown.
  • Ladle the soup into bowls. Top each with a slice of toasted baguette and a generous amount of grated cheese. If you have oven-safe bowls, you can place them under the broiler for a couple of minutes until the cheese is bubbly and slightly browned.
