This Asian Leek soup is one of my favorite soup recipes. It's refreshing with a combination of mints, coconut milk and cilantro. This soup is perfect for any time when you need some extra love.

In wok heat peanut oil, add sliced leek, tofu, soy sauce, peanut butter, curry sauce and pour over vegetables stock with coconut milk. Bring everything to boil, add rice noodle, Lemon grass, then turn heat to lower and let it cooked 15 minutes.
After cooked time add scallions, cilantro, mints on top. Optional, you can use some jalapeños as well.
