- 1 cup Asparagus
- 1 medium Mango
- 1/2 cup Bulgur
- 1 medium Red onion
- 1 cup Tofu
- 3 medium Tomatoes
- 2 small Jalapeños
- 1 tbsp Soy sauce
- 1 tbsp Olive oil
- Salt and Pepper
Perep your veggies. Sliced onion, tofu, tomatoes, jalapeños and mango in squares.
Cooked bulgur in hot water around 10 minutes, then set a side.
In boiling water add asparagus, lower heat to low and let cooked around 10 minutes.
Meanwhile, in hot pan add olive oil, sliced tofu with red onion, soy sauce and let simmer for 10 minutes.
On your plate add asparagus, tofu, tomato, bulgur jalapeños and mango. Sprinkle some extra olive oil on top and season with salt and pepper.
