Ingredients
  

  • 1 cup Asparagus
  • 1 medium Mango
  • 1/2 cup Bulgur
  • 1 medium Red onion
  • 1 cup Tofu
  • 3 medium Tomatoes
  • 2 small Jalapeños
  • 1 tbsp Soy sauce
  • 1 tbsp Olive oil
  • Salt and Pepper

Instructions
 

  • Perep your veggies. Sliced onion, tofu, tomatoes, jalapeños and mango in squares.
  • Cooked bulgur in hot water around 10 minutes, then set a side.
  • In boiling water add asparagus, lower heat to low and let cooked around 10  minutes.
  • Meanwhile, in hot pan add olive oil, sliced tofu with red onion, soy sauce and let simmer for 10 minutes.
  • On your plate add asparagus, tofu, tomato, bulgur jalapeños and mango. Sprinkle some extra olive oil on top and season with salt and pepper.
  • Enjoy
