Melt your chocolate in double boiler or in microwave.
In food processor, add oats and mix them well till you get flour consistence. Then add flour, coconut oil, maple syrup, baking powder, Vanilla extract, Apricot jam, Egg, plant based milk, melted chocolate and mix all ingredients till it good combine.
Use your favorite form. I used Nordic baking cake form. First spray your form with oil, then add one to two spoons of texture in each mini cakes. Sprinkle on top extra chocolate chips.
