Creamy Vegan Broccoli Soup

Ingredients
  

  • 1 tbsp Olive oil
  • 1 cup Leek
  • 1 medium Onion
  • 1 head Broccoli
  • 1 clove Garlic
  • 400 ml Vegetables stock
  • 1 can Coconut milk
  • Thyme

Thyme bread

  • 1/2 cup Bread
  • 1 tbsp olive oil
  • thyme
  • 1 clove garlic

Instructions
 

  • Sliced leek, onion and broccoli in smaller pieces. In wok heat olive oil add onion, leek simmer for 2 minutes then add broccoli garlic, pour over vegetables stock with coconut milk. Bring everything to boil, then turn down the heat to medium and let cooked for 20 to 25 minutes.
  • After cooking time, use a hand mixer or food processor to blend your soup until creamy.

Thyme bread

  • Sliced old bread to smaller pieces then on pan heat olive oil add bread season with salt, pepper and add sliced garlic with thyme. Let all cooked until bread is golden brown, around 5 to 8 minutes.
