2 tbsp oil 4 slices bread 4 eggs 2 tbsp red pesto 1 tomato sliced 4 slices prosciutto 1/4 cup parmesan grated 1/4 cup mozzarella cheese basil leaves
Heat 2 tbsp of oil in a pot over medium heat. Add sliced bread, breaking it slightly with your fingers. Fry until golden brown.
In a bowl, beat 4 eggs. Mix in the cooked bread, season with salt and pepper, and combine well.
Pour the mixture back into the pot. Cook until the bottom is set, then flip to the other side.
Spread red pesto over the cooked egg and bread base. Add sliced tomatoes, prosciutto, parmesan, and top with mozzarella cheese.
Cover the pot with a lid to let the cheese melt.Once the cheese is melted, top with fresh basil leaves.
