1 bagel sliced horizontally 2 tbsp olive oil 1 egg yolk 6-9 spears green asparagus trimmed 1 tbsp Mediterranean seasoning 3 sliced tomato 1 tbsp mayonnaise
Heat olive oil in a pan. Toast the top half of the bagel in the pan, then crack an egg yolk into the hole.
Add asparagus spears to the same pan, season, and cook until tender and the egg is cooked to your liking.
Spread mayonnaise on the bottom half of the bagel, layer with asparagus and tomato slices, and top with the bagel and egg.
