Egg in a Bagel Hole with Asparagus

Today, I’m sharing a recipe that has quickly become a morning favorite of mine — Egg in a Bagel Hole with Asparagus. It’s the kind of breakfast that makes you want to jump out of bed!

Ingredients
  

  • 1 bagel sliced horizontally
  • 2 tbsp olive oil
  • 1 egg yolk
  • 6-9 spears green asparagus trimmed
  • 1 tbsp Mediterranean seasoning
  • 3 sliced tomato
  • 1 tbsp mayonnaise

Instructions
 

  • Heat olive oil in a pan. Toast the top half of the bagel in the pan, then crack an egg yolk into the hole.
  • Add asparagus spears to the same pan, season, and cook until tender and the egg is cooked to your liking.
  • Spread mayonnaise on the bottom half of the bagel, layer with asparagus and tomato slices, and top with the bagel and egg.
  • Enjoy
