2 tbsp Olive Oil 2 tbsp Soy sauce 1 tbsp Peanut butter Salt & Pepper 1 large Eggplant 1/2 cup Sesame Yogurt dressing 1 cup Greek yogurt 1 Garlic 1 Scallions 1/2 cup Cilantro Salt & Pepper
Preheat oven to 180 °C.
For yogurt dressing in small bowl add yogurt press garlic, add sliced scallions with cilantro, salt & pepper and mix all ingredients until combine.
In bowl add Olive oil with soy sauce, peanut butter, salt & pepper. Mix until everything combine.
Eggplant wash and sliced in long sticks, then marinade it in peanut butter mixture for 5 minutes
Place baking paper on the baking sheet, spread sesame on the side andeach stick from eggplant cover with sesame.
Let it baked 10 minutes.
Enjoy with yogurt dressing on the side.
