Eggplant sesame sticks

Baked Eggplant sesame sticks are covered in peanut butter sauce and baked in sesame. This combination is so tasty and easy, you can make it for a side dish or for a BBQ party.

Ingredients
  

  • 2 tbsp Olive Oil
  • 2 tbsp Soy sauce
  • 1 tbsp Peanut butter
  • Salt & Pepper
  • 1 large Eggplant
  • 1/2 cup Sesame

Yogurt dressing

  • 1 cup Greek yogurt
  • 1 Garlic
  • 1 Scallions
  • 1/2 cup Cilantro
  • Salt & Pepper

Instructions
 

  • Preheat oven to 180 °C.
  • For yogurt dressing in small bowl add yogurt press garlic, add sliced scallions with cilantro, salt & pepper and mix all ingredients until combine.
  • In bowl add Olive oil with soy sauce, peanut butter, salt & pepper. Mix until everything combine.
  • Eggplant wash and sliced in long sticks, then marinade it in peanut butter mixture for 5 minutes
  • Place baking paper on the baking sheet, spread sesame on the side andeach stick from eggplant cover with sesame.
  • Let it baked 10 minutes.
  • Enjoy with yogurt dressing on the side.
