Ingredients
  

  • 1 tbsp Olive oil
  • 1 onion sliced
  • 1 tbsp Mediterranean spices mix
  • 1 tbsp Tomato paste
  • 1 tbsp Chili garlic sauce
  • 1 can chickpeas drained
  • 1 can tuna drained
  • 1 cup red lentils
  • 4 cups Vegetable broth
  • Salt and pepper to taste
  • 1 cup Spinach
  • 1 bok choy Optional
  • Scallions for garnish

Instructions
 

  • In a large pan, heat some olive oil over medium heat.Add the sliced onion and cook until caramelized, stirring occasionally.
  • Season the caramelized onion with Mediterranean spices.Stir in tomato paste and chili garlic sauce for a rich flavor.
  • Mix in chickpeas, tuna, and red lentils.Pour in enough vegetable broth to cover the ingredients.
  • Season with salt and pepper.Bring to a boil, then reduce the heat to medium.Let it cook for 15 to 20 minutes, stirring occasionally.
  • About 5 minutes before it's done, add spinach and, if using, bok choy.Cook until the greens are wilted and everything is heated through.
  • Garnish with sliced scallions and more spinach, if desired.
