Ingredients
  

Sweet potato

  • 1 medium Sweet potato
  • 1 tbsp Olive oil
  • 1 tbsp Turmeric
  • Salt

Leek mix

  • 1 medium Leek 
  • 1 large Zucchini
  • 1 tbsp Olive oil
  • 1 tbsp Garlic powder
  • Salt & Pepper

Halloumi 

  • 1 Halloumi 
  • 1 tbsp Garlic powder
  • 1 tbsp Honey
  • Salt & Pepper
  • Garlic
  • 1 small Onion
  • 1 cup Arugula
  • 1/2 cup Chickpeas

Instructions
 

  • Preheat oven at 180 °C.
  • Preparea baking sheet with baking paper on top. 
  • In small bowl add Sweet potato with 1 tbsp Olive oil Salt & 1 tbsp Turmeric powder. Mix well until everything combine, then add sweet potato on your baking sheet.
  • In another bowl add sliced zucchini and leek, add olive oil, and season with garlic powder, salt & pepper. Mix well and add to baking sheet.
  • Sliced halloumi and place them in the middle of baking sheet. Season them with Garlic powder, honey, salt & pepper. Add sliced onion with garlic on the baking sheet and baked for 20 minutes or until golden brown.
  • Meanwhile, in your bowl add arugula with chickpeas then add cooked sweet potatoes, leek, zucchini, halloumi cheese.
  • Enjoy
