Ingredients
  

Dough

  • 4 cups bread flour
  • 1 tbsp sugar
  • 2 tbsp salt
  • 1 tbsp instant yeast
  • 180 ml warm water

Boiling Mixture

  • Large pot of water
  • 2 tbsp sugar
  • 1 tbsp baking soda

Topping

  • 1 egg yolk beaten
  • Sesame seeds, coarse salt, or your choice of topping

Instructions
 

  • Mix 1 tbsp sugar in 1 ¼ cups warm water. Sprinkle yeast on top. Wait 5-10 minutes until foamy.
  • In a bowl, combine flour and salt. Add yeast mixture. Mix to form dough. Knead 10 minutes. Let rise 1 hour in an oiled, covered bowl.
  • Divide dough into 8 pieces. Roll each into a ball, poke a hole in the center, and shape.
  • Preheat oven to 425°F. Boil water with 2 tbsp sugar and baking soda. Boil each bagel 1 minute per side. Remove and place on a baking sheet.
  • Brush bagels with egg yolk. Add toppings. Bake 20-25 minutes until golden.
