Ingredients
  

  • 400 ml Flour of your choice
  • 200 g Brown sugar
  • 125 ml Almond milk
  • 200 ml Soy yogurt
  • 125 ml Oil
  • 2 tbsp Lemon zest
  • 3 tbsp lemon juice
  • Pinch of salt
  • 1 tbsp baking powder

Icing

  • 125 g powder sugar
  • 2 medium lemons

Instructions
 

  • Preheat oven at 180C
  • In a large bowl, combine all your dry ingredients and mix them together until combine.

  • Add milk, oil, and lemon juice and mix well. Be free to use mixer if you like.

  • Spray a little of oil in baking form then pour over dough and let baked for 45 to 50 minutes until the cake is golden brown and a toothpick comes out mostly clean.

  • Let it cool down, then Carefully invert the loaf pan, and transfer the cake to a cooling rack.

Icing

  • In a small bowl add powder sugar and slowly start to add lemon juice and mix all together until you get creamy icing.
