Ingredients
  

  • 2 tbsp olive oil
  • 1 large leek sliced
  • 2-3 cloves garlic thinly sliced
  • 1/4 cup red wine
  • 1 tbsp tomato paste
  • 2 fresh tomatoes sliced
  • 1 can cannellini beans drained and rinsed
  • 1 can coconut milk
  • 1/2 tbsp chili flakes
  • 1 tbsp red pepper powder
  • Salt and pepper to taste
  • 1 tbsp thyme fresh or dried

Instructions
 

  • Heat olive oil in a pan over medium heat.
  • Add the sliced leek and garlic, sautéing until they soften.
  • Pour in the red wine and stir in the tomato paste. Let it simmer until the wine reduces.
  • Add the sliced tomatoes, cannellini beans, and coconut milk to the pan.
  • Season with chili flakes, red pepper powder, salt, and pepper. Mix well.Sprinkle in the thyme.
  • Let the mixture simmer over medium heat for about 15 minutes, or until the sauce thickens slightly and flavors meld.
