Ingredients
  

Chicken Marinade

  • 2 chicken breasts sliced into squares
  • 2 tbsp olive oil
  • 1 tbsp red pepper powder
  • Salt and pepper, to taste

Cooking and Sauce

  • 2 tbsp olive oil
  • 1 large red onion sliced
  • 2 cloves garlic sliced
  • 1 tbsp Italian seasoning
  • 1 tbsp tomato paste
  • 1/4 cup red wine
  • 1 can tomatoes sauce
  • 2 cups water
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes halved
  • 2 cups fresh spinach leaves
  • 8 mini mozzarella balls
  • Fresh basil leaves, for garnish
  • 1 cup pasta of your choice

Instructions
 

  • Combine the diced chicken with olive oil, red pepper powder, salt, and pepper in a bowl. Mix well and set aside.
  • Heat 2 tbsp olive oil in a pot over medium heat. Fry the marinated chicken until golden brown on each side, about 3 minutes per side or until fully cooked. Remove and set aside.
  • In the same pot, add more oil if needed and sauté the sliced red onion until softened. Add sliced garlic, Italian seasoning, and tomato paste. Stir until fragrant.
  • Deglaze with red wine and let it cook down until it forms a thick sauce. Add diced tomatoes, pasta, and water, stirring to combine. Season with salt and pepper to taste.
  • Add cherry tomatoes, spinach leaves, and cooked chicken to the pot. Simmer everything together until the pasta is tender and the spinach wilts.
  • Serve the pasta hot, topped with mini mozzarella balls and garnished with fresh basil leaves.
