1 cup orzo pasta 1 cup lettuce of your choice 1 cucumber thinly sliced 1 scallion thinly sliced 1 small red onion thinly sliced 100 g gorgonzola cheese crumbled For the Dressing 1 cup cilantro leaves Juice of 1 lemon 2 cloves garlic 1/4 cup olive oil 1/4 cup ice cold water Salt and pepper, to taste
