Ingredients
  

  • 1 cup orzo pasta
  • 1 cup lettuce of your choice
  • 1 cucumber thinly sliced
  • 1 scallion thinly sliced
  • 1 small red onion thinly sliced
  • 100 g gorgonzola cheese crumbled

For the Dressing

  • 1 cup cilantro leaves
  • Juice of 1 lemon
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1/4 cup ice cold water
  • Salt and pepper, to taste

Instructions
 

  • In a blender, combine cilantro, lemon juice, garlic, olive oil, and water. Season with salt and pepper, blend until smooth.
  • In a large bowl, mix the cooked orzo with lettuce, cucumber, scallion, and red onion. Drizzle with the dressing and toss to combine.
  • Sprinkle crumbled gorgonzola over the top.
