Ingredients
  

  • 1 cup cauliflower frozen
  • 3/4 dates pitted
  • 1/2 cup pumpkin purée
  • 1/2 tbsp maple syrup
  • 1 tbsp cinnamon
  • 1 1/2 cup plant-based milk (almond, soy, oat, or cashew milk work well)

Optional for topping

  • Vegan whipped cream

Instructions
 

  • In a blender, combine the frozen cauliflower, softened dates, pumpkin purée, maple syrup, and ground cinnamon. Pour in the plant-based milk of your choice. If you prefer a thicker smoothie, start with less milk and add more as needed to reach your desired consistency.
  • Secure the lid on your blender, and blend the mixture on high until everything is completely smooth. This may take a minute or two, depending on the power of your blender. If the smoothie is too thick or not blending well, you can add a bit more milk to help it along.
  • Taste the smoothie and adjust the sweetness if needed by adding more maple syrup or dates, then blend again to mix through. Once the smoothie has reached a smooth and creamy consistency, pour it into glasses.
  • If desired, top each glass with a dollop of vegan whipped cream and a sprinkle of ground cinnamon for an extra touch of autumn flair. Serve immediately and enjoy your refreshing, plant-based pumpkin smoothie!
