This Rainbow veggie sandwich is so tasty. I love to include a lot of different colors from vegetables and fruits into my daily diet, because variety keeps things interesting. Honestly, this sandwich is one of the reason why I love plant-based food. The creamy peanut butter spread with the combination of fresh grilled baguette and a lot of beautiful veggies color make this sandwich so amazing.

In small bowl add olive oil, soy sauce, sriracha, pressed garlic, and peanut butter, mix well until all combine then set aside.
Sliced baguette or sandwich in half and optional, you can grill it in toaster for 5 minutes or baked in oven at 180C for 10 minutes.
