For chocolate base 1 cup dark chocolate 1/2 cup puffed quinoa 1/2 cup Chopped nuts of your choice For coffee layer 1 cup peanut butter 1/3 cup rice syrup 3 tbsp espresso For vanilla layer 1 cup Vegan cream cheese 1 tbsp vanilla extract 3 tbsp Rice syrup
For chocolate base In a bowl, mix together all the chocolate base ingredients.
Transfer 1 to 2 tbsp of the mixture into each of the muffin holes and flatten it down into a compact layer
Freeze for at least 15 minutes so that the chocolate firms up.
For coffee layer In a bowl, mix all ingredients for coffee layer.
Transfer 1 to 2 tbsp of the mixture on top of the firmed up chocolate base and smooth out the tops with a small spoon.
Freeze for at least 20 minutes.
For vanilla layer In a bowl, mix all ingredients for vanilla layer.
Transfer 1 to 2 tbsp of the mixture on top of the firmed up coffee layer and smooth out the tops with a small spoon.
Freeze for 2 hours or overnight.
