Ingredients
  

For chocolate base

  • 1 cup dark chocolate
  • 1/2 cup puffed quinoa
  • 1/2 cup Chopped nuts of your choice

For coffee layer

  • 1 cup peanut butter
  • 1/3 cup rice syrup
  • 3 tbsp espresso

For vanilla layer

  • 1 cup Vegan cream cheese
  • 1 tbsp vanilla extract
  • 3 tbsp Rice syrup

Instructions
 

  • Add paper muffins cups in each holes of muffin tray.

For chocolate base

  • In a bowl, mix together all the chocolate base ingredients.
  • Transfer 1 to 2 tbsp of the mixture into each of the muffin holes and flatten it down into a compact layer
  • Freeze for at least 15 minutes so that the chocolate firms up.

For coffee layer

  • In a bowl, mix all ingredients for coffee layer.
  • Transfer 1 to 2 tbsp of the mixture on top of the firmed up chocolate base and smooth out the tops with a small spoon.
  • Freeze for at least 20 minutes.

For vanilla layer

  • In a bowl, mix all ingredients for vanilla layer.
  • Transfer 1 to 2 tbsp of the mixture on top of the firmed up coffee layer and smooth out the tops with a small spoon.
  • Freeze for 2 hours or overnight.
  • Enjoy
