Red pepper mini pizza

Ingredients
  

  • 1 big Red pepper
  • 1 cup Vegan cheese
  • 3 tbsp Tomato paste
  • 1 clove Garlic
  • 1 tbsp Olive oil

Topping

  • 2 small Mushrooms
  • 1 Scallions
  • 2 small Tomatoes

Instructions
 

  • Preheat oven at 180C
  • In small bowl combine vegan cheese with tomato paste, pressed garlic, salt, pepper and olive oil.
  • Sliced red pepper in the big circle so that you can fill up the middle.
  • On baking sheets place baking paper, then place your pepper circles. In each pepper add the cheese mixture. Then add topping of your choice. I used some mushrooms, scallions, and thyme.
  • Baked for 20 -25 minutes at 180 C.
