Seitan salad

This vegan Seitan salad is so refreshing and tasty. All veggies with grilled seitan gyros and parsley-garlic dip is just so yummy. For extra spice, you can add some jalapeños on top.

Ingredients
  

  • 1 tbsp Olive oil
  • 250 g Seitan gyros
  • 1 medium Red onion
  • 1 tbsp Sriracha
  • 2 cups Lamb‘s lettuce
  • 1 cup Cucumber
  • 1 medium Red pepper
  • 1/2 cup Jalapeños

Dressing

  • 2 tbsp Olive oil
  • 1 cup Parsley
  • 1 clove Garlic
  • Salt & Pepper

Instructions
 

  • Sliced onion into strips.
  • In pot heat oil then add seitan gyros with half of sliced red onion, season with salt, pepper and Sriracha. Let it simmer for 5 to 8 minutes.
  • Meanwhile, prep veggies. Cucumber and red pepper and jalapeños sliced in small.
  • For dressing add in small bowl, olive oil, small chopped parsley, pressed garlic and season with salt & pepper.
  • In your bowl add everything for salad Lamb’s lettuce, cucumber, red pepper, the other half of red onion, jalapeños add your cooked seitan and top with parsley dressing.
  • Enjoy
