This vegan Seitan salad is so refreshing and tasty. All veggies with grilled seitan gyros and parsley-garlic dip is just so yummy. For extra spice, you can add some jalapeños on top.

In pot heat oil then add seitan gyros with half of sliced red onion, season with salt, pepper and Sriracha. Let it simmer for 5 to 8 minutes.
Meanwhile, prep veggies. Cucumber and red pepper and jalapeños sliced in small.
For dressing add in small bowl, olive oil, small chopped parsley, pressed garlic and season with salt & pepper.
In your bowl add everything for salad Lamb’s lettuce, cucumber, red pepper, the other half of red onion, jalapeños add your cooked seitan and top with parsley dressing.
