4 cups lettuce of your choice, chopped 2 cupsq bok choy sliced 1 cucumber sliced 1 cup bulgur cooked 1/4 can corn drained 3 scallions sliced 1/4 cup cilantro chooped 1/4 cup nuts chooped 1/4 cup Parmesan cheese grated Dressing 1/4 cup olive oil 1 tbsp Italian seasoning mix Salt & Pepper
In a large bowl, combine the lettuce, bok choy, cucumber, bulgur, corn, scallions, cilantro, and nuts.
In a small bowl, whisk together the olive oil, salt, pepper, and Italian seasoning.
Pour the dressing over the salad and toss to combine.
Top with grated Parmesan cheese.
