Ingredients
  

  • 4 cups lettuce of your choice, chopped
  • 2 cupsq bok choy sliced
  • 1 cucumber sliced
  • 1 cup bulgur cooked
  • 1/4 can corn drained
  • 3 scallions sliced
  • 1/4 cup cilantro chooped
  • 1/4 cup nuts chooped
  • 1/4 cup Parmesan cheese grated

Dressing

  • 1/4 cup olive oil
  • 1 tbsp Italian seasoning mix
  • Salt & Pepper

Instructions
 

  • In a large bowl, combine the lettuce, bok choy, cucumber, bulgur, corn, scallions, cilantro, and nuts.
  • In a small bowl, whisk together the olive oil, salt, pepper, and Italian seasoning.
  • Pour the dressing over the salad and toss to combine.
  • Top with grated Parmesan cheese.
  • Enjoy your fresh and delicious salad!
