6 Sweet potatoes peeled and cut into cubes 2 red onions sliced 2 tbsp Olive oil (for drizzling) Fresh sage Fresh rosemary Salt and Pepper, to taste 1 tbsp Chili flakes (adjust according to your heat preference) Tahini Dressing: 1 cup vegan yogurt 1 lemon 2 tbsp tahini 1 clove garlic pressed or finely minced 1-2 tbsp olive oil
Preheat your oven to 400°F (200°C).
In a large mixing bowl, toss the sweet potato cubes and red onion with a drizzle of olive oil until well coated.
Chop the sage and rosemary finely and sprinkle them over the sweet potatoes. Add salt, pepper, and chili flakes. Toss again to ensure even coating.
Spread the sweet potato mixture on a baking tray lined with parchment paper or a silicone baking mat.
Roast in the oven for 25-30 minutes, or until the sweet potatoes are tender and slightly golden. Stir halfway through to ensure even cooking.
Remove from the oven and let it cool slightly before serving.
Tahini Dressing In a mixing bowl, combine the vegan yogurt, lemon zest, lemon juice, tahini, and pressed garlic. Whisk until smooth.
Slowly drizzle in the olive oil while whisking to incorporate it into the dressing.Season with salt and pepper, adjusting to taste.
Refrigerate the dressing for about 30 minutes to let the flavors meld. Give it a good stir before serving.
