Ingredients
  

  • 6 Sweet potatoes peeled and cut into cubes
  • 2 red onions sliced
  • 2 tbsp Olive oil (for drizzling)
  • Fresh sage
  • Fresh rosemary
  • Salt and Pepper, to taste
  • 1 tbsp Chili flakes (adjust according to your heat preference)

Tahini Dressing:

  • 1 cup vegan yogurt
  • 1 lemon
  • 2 tbsp tahini
  • 1 clove garlic pressed or finely minced
  • 1-2 tbsp olive oil

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, toss the sweet potato cubes and red onion with a drizzle of olive oil until well coated.
  • Chop the sage and rosemary finely and sprinkle them over the sweet potatoes. Add salt, pepper, and chili flakes. Toss again to ensure even coating.
  • Spread the sweet potato mixture on a baking tray lined with parchment paper or a silicone baking mat.
  • Roast in the oven for 25-30 minutes, or until the sweet potatoes are tender and slightly golden. Stir halfway through to ensure even cooking.
  • Remove from the oven and let it cool slightly before serving.

Tahini Dressing

  • In a mixing bowl, combine the vegan yogurt, lemon zest, lemon juice, tahini, and pressed garlic. Whisk until smooth.
  • Slowly drizzle in the olive oil while whisking to incorporate it into the dressing.Season with salt and pepper, adjusting to taste.
  • Refrigerate the dressing for about 30 minutes to let the flavors meld. Give it a good stir before serving.
