This recipe of Sweet & Sour Tofu is so tasty. The combination of crispy tofu, grilled vegetables and yummy sweet sour sauce is just perfection on the plate. I was inspired from Chinese cuisine and make it simple, so you can enjoy this dish any time you like.

First sliced your tofu in smaller squares and marinade it in soy sauce for at least 10 to 15 minutes.
Rinse the rice under cold water until the water runs clear. In a medium saucepan, bring the water to a boil. Add the salt, stir, and then add the rinsed and drained rice. Reduce the heat to low, cover, and let simmer for 20 minutes.
Meanwhile, prepare your sweet & sour sauce. Combine water with tapioca and stir good,then add all rest ingredients.
After the tofu is marinade add it in to the container without the liquid, add 2 tbsp of tapioca closed and mix really well.
In a hot wok, heat oil and place your tofu. Fry 5 to 8 minutes until tofu get brown gold color.
In the same wok add sliced onion, sliced pepper, simmer then add pressed garlic, scallions, and simmer for 5 minutes. Then add the sweet & sour sauce, bring everything to boiled then turn the heat on medium and let cooked 10 minutes.
In your bowl add rice, bok choy, with sweet sour sauce and top with tofu and some scallions.
