In a large pot, heat the sesame oil over medium heat. Add the sliced red onion, red and yellow bell peppers, leek, and mushrooms to the pot. Sauté for about 5 minutes until they start to soften.
Stir in the chopped bok choy, soy sauce, oyster sauce, and chili sauce. Mix well. Add the thinly sliced chicken breast to the pot. Pour in the coconut milk and chicken stock. Increase the heat and bring the mixture to a boil.
