Ingredients
  

Hummus

  • 1 can Chickpeas
  • 2 tbsp Nutritional yeast
  • 2 tbsp Olive oil
  • 2 tbsp Tahini
  • Lemon juice

For the Rainbow Wrap

  • 2 Tortillas
  • 1/2 cup Red cabbage
  • 3 small Tomatoes
  • 1/2 cup Lettuce
  • Spring onion

Instructions
 

  • In a blender, combine the chickpeas, nutritional yeast, salt, pepper, olive oil, tahini, and lemon juice.
  • Blend until the mixture is smooth and creamy. If needed, add a splash of water to achieve the desired consistency. Taste and adjust seasonings as needed.
  • Set aside in a bowl.
  • Lay a tortilla flat on a clean surface or plate.
  • Spread a generous layer of the nutritional yeast hummus over the tortilla.
  • Starting near one edge, arrange a line of sliced red cabbage.
  • Follow with a line of sliced tomatoes, then lettuce, and finally sprinkle some spring onion.
  • Roll the tortilla tightly, tucking in the sides as you go, to create a wrap.
  • Enjoy
