Vegan tacos

These versatile Vegan tacos are packed with black beans, corn, lettuce, and fresh made guacamole. They are so tasty that you will don’t eat only one.

Ingredients
  

  • 12 Taco shells
  • 250 gram Seitan
  • 2 tbsp Tacos seasoning
  • 1 can Salsa
  • 1/2 cup Corn
  • 1/2 cup Black beans

Guacamole

  • 1 large Avocado
  • 1 medium Onion
  • 1 large Tomato
  • 1 tbsp Olive oil
  • Salt &Pepper

Yogurt dip

  • 1 cup Plant-based yogurt
  • 3 tbsp Vegan mayo
  • 1/2 cup Scallions

Optional

  • Jalapeño

Instructions
 

Guacamole

  • Sliced avocado inhalf lengthwise. Gently twist the two halves to separate them and expose the pit.You can slice your avocado is to score the flesh with your knife or with a small spoon take avocado out and place in a small bowl. Add tomato, onion, olive oil and season with salt & Pepper. Mix well until all ingredients combine.

Yogurt dip

  • In the other bowl, add plant-based yogurt and mix it with vegan mayo and sliced scallions. Mix until combine and then set on side.
  • Sliced seitan in small pieces then in pan heat a little oil add sliced seitan season with salt and tacos seasoning and let simmer for 6 to 8 minutes.
  • Add to your Taco shells seitan, black beans, corn, lettuce, and top with salsa and freshmade guacamole and yogurt dip. Optional, you can top it with some sprouts and Jalapeño.
  • Enjoy
