Cooked rice in a small pot with salt water for 10 minutes, then turn the heat off and let it cover for the other 10 minutes.
Dry tofu then use a small knife, score the top of each slice of tofu by cutting diagonal slices, not too deep into the top, you want to make sure you don’t go all the way through. Then cut back the other direction at a diagonal, so you have cross-hatching all through the top of the tofu.
Marinade
In a small bowl, add all ingredients for marinade and mix well. Then let the tofu marinade for 5 minutes.
In baking form place baking paper add tofu and let baked for 45 minutes.
Glaze
In small bowl add all ingredients for glaze: Soy sauce, rice syrup, pressed garlic, Grating Ginger and sriracha. 10 minutes before cooked time, spread the glaze on top of tofu, then let it baked to the end.
On plate add cooked rice vegan salmon and top with scallions.
