Ingredients
  

  • 1 cup Purple potato
  • 1/2 cup Purple carrots
  • 1 tbsp Red pepper powder
  • 2 tbsp Olive oil
  • 1 medium Onion
  • 1 clove Garlic
  • 700 ml Water
  • 1 tbsp Oregano
  • 1 tbsp Turmeric
  • Salt & Pepper

Instructions
 

Potato Skin Chips

  • Wash really well and peel potatoes with carrots.
  • Preheat the oven to 200ºC. Line a large baking sheet with baking paper.
  • Potatoes and carrots peels add to the baking sheet season with salt and red pepper powder, pour over olive oil and mix well then spread out evenly onto prepare baking sheet. Roast for 15 minutes.

Potato soup

  • In a pot heat oil then add sliced onion simmer until onion soften, then add sliced garlic and simmer one more minutes. Add sliced potatoes, with carrots, pour over water and season with salt, pepper oregano and turmeric. Bring everything to boil then turn heat on low and cooked for 15 to 20 minutes, until potatoes are cooked.
  • Use your blender or hand mixer and blend your soup to creamy consistence.
  • Top with Potato Skin Chips
  • Enjoy
