This chickpea salad sandwich is lately my go-to lunch. It’s so easy to make, and you can use it on a bread, toast, or Buddha bowls. This is so dedicates and full of nutrition that you will fall a love with.
Why we love chickpea
Chickpea, or named garbanzo beans, has been used in Middle Eastern countries for centuries. Chickpea has a lot of nutrition, they proved us with vitamins, minerals and fiber.
One of the health benefits of chickpeas is that they may keep you feel full for a longer time.
There has been make a lot of studies with women who eaten cup of chickpea before a lunch meal, and they experimented slightly reduction in appetite.
The other great health benefits is that chickpea is high in plant protein. So if you are vegan or if you are not eating animal products try to add a cup of chickpea in your daily intake to get enough of protein in your diet.

Chickpea โ in this recipe, it’s great to use chickpea in can. Try to buy bioproduct in your near health food market. We all love creamy hummus and this recipe is inspired from it. I don’t know how you, but sometimes I have no mood to make all mess in kitchen to make a hummus, because I am the one who need to clean it up. That’s why I create this recipe, all you need is a fork to little break the chickpea down. That’s all! You don’t need to take out your food processor and clean it, you require just a fork. So in these days when you don’t feel for cleaning, and you are looking for an easy but still healthy dish, try my Chickpea salad sandwich.
Onion โ I love to put some purple color by using red onion in this dish, but you can choose between red onion or scallion.
Chili flakes โ If you are a spice food lover, be free to use as much as you like. Normally I buy a package of chilies and then make it smaller in a stone pestle.
Olive oil โ Olive oil is a great choose for this salad. Olive oil has anti-aging benefits, and it can moisturize and softens the skin.
Cucumber โ To make this sandwich complete, sliced some cucumber. You can use in this case red pepper or one tomato as well.
Smoked Tofu โ My favorite brand with great smoked tofu is Taifun, but you can use any brand you like. Tofu proved us with a great health benefits. It can boost memory, may lower risk of breast cancer, help lower risk of type 2 diabetes and protect heart health.
Whole grain bread โ use whole grain bread or rye bread and If you prefer to make this recipes gluten-free use a gluten-free bread

Ingredients
Chickpea salad
- 1 can Chickpea
- 1 medium onion red
- 1/2 cup parsley
- 1 tbsp chili flakes
- 1 tbsp olive oil
- Salt & Pepper
Ingredients for toast bread
- whole grain bread
- 1 small cucumber
- 1/2 cup letters
- 1 medium tofu smoked
Optional:
- 1 tbsp peanut butter
Instructions
Chickpea salad
- Chickpea can strain through cold water, place on large bowl and with fork press chickpea down.
- Add sliced red onion with chopped parsley, olive oil salt and pepper.
- If you like spicy food, add chili flakes and mix all together.
Chickpea toast bread
- Toast whole grain bread
- This step is optional, spread one tbsp peanut butter over your bread.
- Add chickpea salad with tofu and cucumber
- Enjoy
