Also, coconut milk that add extra hydration and chicken breast for comfort satisfaction.
Ingredients for Thai curry soup
Chicken – try to find bio chicken breast. For this dish stay with chicken meat, however if you are vegetarian you can make this soup without chicken as well.
Carrots – because this soup is in warm colour pallet, carrot are perfect option to add it inside. With orange colour make carrots and sweet potatoes this soup more colourful.
Sweet potato – are rich in Beta-carotene, they help calm stomach, prevent cancer and help prevent dehydration. In country like Okinawa (is now as a Blue zone country and people with most longevity in the world) in Japan are sweet potatoes on daily plate.
Mushrooms – to boost more iron and vitamin D we add mushrooms in this dish. You can use Cremini, Portobello or Shiitake Mushrooms.
Bok Choy – is low in calorie, plus rich in Iron, Fibre and vitamin K
Onion – Red onion or spring onion are great option to add in Thai curry soup.
Chicken stock – try to buy chicken stock in your bio market with no added sugar
Coconut milk – buy full fat Coconut milk in can in your near bio market.
Curry powder – have a great benefits for example is Anti-inflammatory, Antioxidant, it boosts our immunity and help in healthy hair and nails grow

Ingredients
- 1 cup Chicken breast
- 1 cup Carrots
- 1 cup Sweet potato
- 1 cup Mushrooms
- 1 cup Bok Choy
- โ cup Onion
- 800 ml Chicken stock
- 1 cup Coconut milk
- 2 tbsp Curry powder
- 1 tbsp Turmeric powder
- ยฝ tbsp Chili
- 2 tbsp Red pepper powder
- โ cup Olive oilย ย
- โ cup Peanut oil
Instructions
- Cut chicken breast in square. In a small ball add peanut oil with red pepper powder, salt, pepper, chicken and marinate chicken at least 5 minutes.
- Meanwhile, peel off vegetables, carrots cut in half moon, sweetpotatoesย and onioncut in squaresย ย
- In medium sauce pan heat olive oil, add marinated chicken simmer for 5 minutes then add onions, salt and simmer for 3 minutes till onion soften but don't get colour.
- Add turmeric with curry powder, mix well then add coconut milk, sweat potatoes, mushrooms, carrots, chicken stock, salt and pepper. Cook 25 to 30 minutes on medium heat.
- 5 minutes before serving add bok choy .
- Enjoy your soup with some extra chillion top
