Cut chicken breast in square. In a small ball add peanut oil with red pepper powder, salt, pepper, chicken and marinate chicken at least 5 minutes.
Meanwhile, peel off vegetables, carrots cut in half moon, sweetpotatoes and onioncut in squares
In medium sauce pan heat olive oil, add marinated chicken simmer for 5 minutes then add onions, salt and simmer for 3 minutes till onion soften but don't get colour.
Add turmeric with curry powder, mix well then add coconut milk, sweat potatoes, mushrooms, carrots, chicken stock, salt and pepper. Cook 25 to 30 minutes on medium heat.
5 minutes before serving add bok choy .

For more aroma and fresh taste in curry soup you can add half of lime inside and for a decoration some extra on top
