Ingredients
  

  • 1 cup Chicken breast
  • 1 cup Carrots
  • 1 cup Sweet potato
  • 1 cup Mushrooms
  • 1 cup Bok Choy
  • cup Onion
  • 800 ml Chicken stock
  • 1 cup Coconut milk
  • 2 tbsp Curry powder
  • 1 tbsp Turmeric powder
  • ½ tbsp Chili
  • 2 tbsp Red pepper powder
  • cup Olive oil  
  • cup Peanut oil

Instructions
 

  • Cut chicken breast in square. In a small ball add peanut oil with red pepper powder, salt, pepper, chicken and marinate chicken at least 5 minutes.
  • Meanwhile, peel off vegetables, carrots cut in half moon, sweetpotatoes  and onioncut in squares  
  • In medium sauce pan heat olive oil, add marinated chicken simmer for 5 minutes then add onions, salt and simmer for 3 minutes till onion soften but don't get colour.
  • Add turmeric with curry powder, mix well then add coconut milk, sweat potatoes, mushrooms, carrots, chicken stock, salt and pepper. Cook 25 to 30 minutes on medium heat.
  • 5 minutes before serving add bok choy .
  • Enjoy your soup with some extra chillion top

Tips:
For more aroma and fresh taste in curry soup you can add half of lime inside and for a decoration some extra on top
