4 cups kale leaves stems removed and leaves torn into bite-sized pieces 2 tbsp olive oil 1 can white beans drained and rinsed 1 small red onion thinly sliced 1 avocado cut into squares 1 cup cherry tomatoes halved 2 tbsp garlic oil Salt and pepper to taste 1/4 cup Parmesan cheese grated
Remove the kale leaves from their stems and place them in a large bowl.
Drizzle 2 tablespoons of olive oil over the kale. Use your hands to massage the oil into the leaves until they soften.
To the bowl, add 1 cup drained and rinsed white beans, the sliced red onion, avocado squares, and halved cherry tomatoes.
In a small bowl, whisk together 2 tablespoons of garlic oil with salt and pepper to taste. Pour this dressing over the salad ingredients.
Toss everything together to mix well. Sprinkle 1/4 cup of grated Parmesan cheese over the top of the salad. Serve and enjoy your Avocado Kale Salad!
