Ingredients
  

  • 4 cups kale leaves stems removed and leaves torn into bite-sized pieces
  • 2 tbsp olive oil
  • 1 can white beans drained and rinsed
  • 1 small red onion thinly sliced
  • 1 avocado cut into squares
  • 1 cup cherry tomatoes halved
  • 2 tbsp garlic oil
  • Salt and pepper to taste
  • 1/4 cup Parmesan cheese grated

Instructions
 

  • Remove the kale leaves from their stems and place them in a large bowl.
  • Drizzle 2 tablespoons of olive oil over the kale. Use your hands to massage the oil into the leaves until they soften.
  • To the bowl, add 1 cup drained and rinsed white beans, the sliced red onion, avocado squares, and halved cherry tomatoes.
  • In a small bowl, whisk together 2 tablespoons of garlic oil with salt and pepper to taste. Pour this dressing over the salad ingredients.
