On a pan heat oil then add sliced onion, mushrooms, chickpeas, pressed garlic, season with salt, pepper soy sauce, and be free to use sriracha if you like it a spicy. Let it cook around 8 to 10 minutes.
Place on each half of tortilla chickpeas mixture then spread some vegan mozzarella on top add some lettuce then fold the tortilla in Half.
Heat a non-stick pan and let it cooked until tortilla get golden brown.
