This Vegan Chickpeas quesadillas are full of flavor. Tasty cooked chickpeas with mushroom and perfect melted vegan cheese with a lot of lettuce is just so tasty. These quesadillas are perfect for any time if you are looking for some nutrition breakfast, lunch or some quick dinner.

Ingredients
  

  • 1 Onion
  • 1/2 cup Mushrooms
  • 1 can Chickpeas
  • 1 clove Garlic
  • 1 tbsp Sriracha
  • 1 tbsp Soy sauce
  • 2 tortilla wraps
  • 1 cup Lettuce

Instructions
 

  • On a pan heat oil then add sliced onion, mushrooms, chickpeas, pressed garlic, season with salt, pepper soy sauce, and be free to use sriracha if you like it a spicy. Let it cook around 8 to 10 minutes.
  • Place on each half of tortilla chickpeas mixture then spread some vegan mozzarella on top add some lettuce then fold the tortilla in Half.
  • Heat a non-stick pan and let it cooked until tortilla get golden brown.
