In a bowl, mix 2 tablespoons olive oil, red pepper powder, turmeric powder, salt, and pepper. Add chicken thighs and marinate for at least 10 minutes.
Heat 1 tablespoon of olive oil in a pot over medium heat. Add chicken thighs and cook for about 5 minutes on each side, until they get a nice color. Remove the chicken from the pot and set aside.
In the same pot, add the sliced onion and cook until soft. Season with a little more turmeric and red pepper powder. Add pressed garlic and cook for another minute.
Stir in the rice, making sure it's coated with the spices and onion. Pour over the vegetable stock and coconut milk. Bring to a boil, then reduce the heat to medium.
Add the sliced mushrooms to the pot. Place the chicken thighs on top of the rice mixture. Cover and cook on medium heat for 15-20 minutes, or until the rice is fully cooked.
Sprinkle chopped parsley over the top before serving. Enjoy your delicious and comforting one-pot chicken and rice!
