Ingredients
  

  • 4 chicken thighs bone-in and skin-on

Marinade

  • 2 tbsp olive oil
  • 1 tbsp red pepper powder
  • 1 tbsp turmeric powder
  • Salt and pepper, to taste

One pot

  • 1 tbsp olive oil
  • 1 medium onion sliced
  • 2 cloves garlic pressed
  • 1 cup rice rinsed
  • 2 cups vegetable stock
  • 1 cup coconut milk
  • 1 cup mushrooms sliced
  • Fresh parsley chopped, for garnish

Instructions
 

  • In a bowl, mix 2 tablespoons olive oil, red pepper powder, turmeric powder, salt, and pepper. Add chicken thighs and marinate for at least 10 minutes.
  • Heat 1 tablespoon of olive oil in a pot over medium heat. Add chicken thighs and cook for about 5 minutes on each side, until they get a nice color. Remove the chicken from the pot and set aside.
  • In the same pot, add the sliced onion and cook until soft. Season with a little more turmeric and red pepper powder. Add pressed garlic and cook for another minute.
  • Stir in the rice, making sure it's coated with the spices and onion. Pour over the vegetable stock and coconut milk. Bring to a boil, then reduce the heat to medium.
  • Add the sliced mushrooms to the pot. Place the chicken thighs on top of the rice mixture. Cover and cook on medium heat for 15-20 minutes, or until the rice is fully cooked.
  • Sprinkle chopped parsley over the top before serving. Enjoy your delicious and comforting one-pot chicken and rice!
