Ingredients
  

  • 2 cups jasmine rice cooked, or leftover rice
  • 2 large eggs beaten
  • 2 tbsp oil divided
  • 1/2 cup scallions sliced, plus more for garnish (optional)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

Instructions
 

  • In a large pot or skillet, heat 1 tablespoon of oil over medium heat. Add the beaten eggs to the pot. Let them cook without stirring for a minute, until they are just set but still soft. Gently stir in the cooked rice, breaking up any clumps. Mix well with the eggs. Push the rice and egg mixture to one side of the pan.

  • In the other half of the pan, add the remaining tablespoon of oil and the sliced scallions. Sauté for about 1 minute until they start to soften. Mix the sautéed scallions with the rice and eggs. Pour in the soy sauce and sesame oil. Stir everything together until the rice is evenly coated and begins to take on a brown color from the soy sauce.
  • Let the rice cook for another 2-3 minutes, stirring occasionally, until everything is well combined and heated through.
