Mediterranean Thyme Salad

Ingredients
  

  • 1 can chickpeas
  • 1 cucumber sliced
  • 2 tomatoes sliced
  • 1 red onion sliced
  • 1/ cup Green olives
  • 1 cup Greek yogurt
  • 2 cloves garlic pressed
  • Thyme
  • Salt and pepper
  • 3 tbsp Olive oil

Optional

  • 1 tbsp Mediterranean spices

Instructions
 

  • Drain the chickpeas and place them in a large bowl. Use a fork to partially mash them. Add the sliced cucumber, tomatoes, red onion, and green olives to the bowl. Mix well.
  • In a separate bowl, prepare the dressing: combine Greek yogurt with the pressed garlic cloves. Add thyme, salt, and pepper to taste. Optionally, incorporate Mediterranean spices for extra flavor.
  • Pour the dressing over the salad and mix to coat evenly.
  • Sprinkle additional thyme on top. Drizzle with a bit more olive oil.
  • Serve and enjoy your refreshing Mediterranean Chickpea Salad!
