Seitan salad

This Seitan salad is so delicate and easy to make. The combination of Seitan and crunchy peanuts with greens, red lentil pasta is too yummy. Seitan is a great substitute for a chicken, and this Asian inspired salad with your next favorite recipe this summer.

Ingredients
  

  • 1 tbsp Olive oil
  • 250 gram Seitan
  • 1/2 cup Peanuts
  • 1 medium Chinese cabbage
  • 2 tbsps Soy sauce
  • 1 tbsp Hot sauce
  • 1 Onion
  • 1 Scallions
  • Mint
  • 1 small Lemon

Salad

  • 1 cup lamb's lettuce
  • 1 large  Cucumber
  • 1 cup Red lentil pasta
  • 1 medium  Avocado

Instructions
 

  • Cooked red lentil pasta in salt water as long as the instruction on the package write.
  • Heat olive oil in wok pan. Add sliced seitan with peanuts and simmer for 5 minutes. Then add chopped Chinese cabbage, soy sauce, hot sauce and simmer 5 more minutes. Before the end of the cook time, add a lime juice with some Mint. Then set aside.
  • For your salad add lamb's lettuce with sliced cucumber and avocado, red lentil pasta and seitan mix.
  • A great option for dressing is to mix vegan mayo with a vegan yogurt and season with salt and pepper.
  • Enjoy.
