Heat olive oil in wok pan. Add sliced seitan with peanuts and simmer for 5 minutes. Then add chopped Chinese cabbage, soy sauce, hot sauce and simmer 5 more minutes. Before the end of the cook time, add a lime juice with some Mint. Then set aside.
For your salad add lamb's lettuce with sliced cucumber and avocado, red lentil pasta and seitan mix.
A great option for dressing is to mix vegan mayo with a vegan yogurt and season with salt and pepper.
