Sweet potato salad

Sweet potato salad is great and easy to make. This recipe is so tasty. Baked vegetables, with Mediterranean vegetable all-rounder from Just Spices and fresh arugula with red lentil, is so satisfying and aromatic.

Ingredients
  

  • 1 large Sweet potato
  • 1 Red pepper
  • 1 medium Onion
  • 2 cups Lettuce
  • 1 cup Red lentil
  • 2 tbsp Mediterranean vegetable all-rounder
  • 1 tbsp Olive oil

Instructions
 

  • Preheat oven at 180 C.
  • In a small pot, cooked red lentil in salt water for 10 minutes, or until red lentil is cooked trough.
  • Meanwhile, sliced sweet potatoes with red pepper in small squares then sliced red onion in 1/3.
  • In a bowl mix sweet potato with red pepper onion and season with Salt, Pepper, Mediterranean vegetable all-rounder mix and olive oil. Place it on baking paper and baked for 40 minutes at 180C.
  • In a small bowl, add arugula with cooked red lentil and top with baked sweet potato. Top with some parsley and enjoy.
