Thai Peanut Noodles

This vegan Thai Peanut Noodles are so light and great option for easy lunch or light dinner recipe. The combination of fresh vegetables, light noodle and creamy peanut sauce is so yummy.

Ingredients
  

Peanut sauce

  • 1 tbsp Peanut butter
  • 2 tbsp Soy sauce
  • 1 tbsp Tamari sauce
  • 1 tbsp Rice syrup
  • 1/2 tbsp Chili flakes
  • 1/2 Lime

Thai Salad

  • 2 cups Arugula
  • 1 large Cucumber
  • 2 large Carrots
  • 1 cup Rice noodles
  • 2 Scallions
  • 1/2 cup Peanuts

Instructions
 

Peanut sauce

  • In a larger bowl, add all ingredients for sauce and mix well until all combine. Then set on side.

Thai Salad

  • Cooked rice light noodle as the description write on the package.
  • In a large bowl, add arugula. With spiralizer make cucumber and carrots noodle and place them in your bowl, add noodles, scallions. Pour over peanut sauce and top with some peanuts.
  • Enjoy!
