How to make Vegan Mexican salad
For guacamole: Sliced tomato, onion in small squares. Sliced avocado in half lengthwise. Gently twist the two halves to separate them and expose the pit. You can slice your avocado is to score the flesh with your knife or with a small spoon take avocado out and place in a small bowl. Add tomato, onion, cilantro, and season with salt & Pepper then press some fresh lime juice. Mix well until all ingredients combine.
For Mexican salad: First sliced cucumber, red pepper, red cabbage and scallions in small pieces. In large bowl add Lettuce, corn, kidney beans, sliced cucumber, red pepper red cabbage, scallions. Add in the middle fresh made guacamole and top with Tortilla-Chip. Enjoy!

- 1 large Avocado
- 1 tbsp Olive oil
- 1 small Tomato
- 1 small Onion
- 1 Cilantro
- Salt & Pepper
- 1/2 Lime

- 1 can Corn
- 1 can Kidney beans
- 1 medium Cucumber
- 1 large Red pepper
- 1 cup Red cabbage
- 1/2 cup Scallions
- 1 cup Tortilla-Chip
