How to make Corn salad
Dressing- In small bowl add olive oil with vegan mayo, salt and pepper and lime juice. Mix until all ingredients combine.
Sliced yellow pepper in squares, Lettuce and scallions sliced in smaller pieces.
Cut the avocado lengthwise. When you reach the pit, go around it with the tip of your knife rather than cutting through. Turn the avocado over to make sure you cut all the way through from top to bottom.
Pick up the avocado and hold it in both hands, with the cut you made in the middle. Twist the two halves in opposite directions, and theyโll pop apart, with the pit staying lodged in one of them, with spoon carefully take avocado from the skin then sliced in long sliced. In your bowl add lettuce, yellow pepper, corn, scallions, sliced avocado, and pour over lime dressing. Top with chives.

- 1/3 cup Chives
