I love sweet potato and I find Buddha bowls a great way how we can include all good stuff in our diet, for instance greens, veggies, protein, healthy fats, and fiber. Ingredients for Sweet Potato & Lentil Buddha Bowl

Red lentil โ€“ Red lentil are great source of proteins and minerals and is easy to add in any Buddha bowl. Normally I cooked some legumes at the weekend, and then I have any time some red lentils by the hand and I can add it in my bowls.

Sweet potato โ€“ This make Buddha bowl extra dedicates. I love roasted potatoes, it’s one of the comfort food that I can eat anytime.

Zucchini โ€“ This vegetable is easy to add in any bowls. If you have no zucchini at home, you can swap it to cucumber. Zucchini has a great benefits, for instance is full of vitamin C and help to prevent diseases and help for good vision.

Lettuce โ€“ Add any green lettuce you like, and you prefer. For this recipe I used iceberg lettuce but be free to choose for example romaine, arugula, green leaf, red leaf or spinach.

Celery โ€“ For some crunch and celery in this Buddha bowl. Celery is great to relives Arthritis, is anti-inflammatory, calms nerves and help our brain

Onion โ€“ Add some red onion for extra color and great taste.

Avocado โ€“ Avocado is a great source of healthy fats. It’s rich in antioxidants and help to prevent cancer, lower cholesterol and improves skin health. Avocado is also a great source of potassium.

Nuts โ€“ Use any nuts you like, I used walnuts. They may lower risk of cancer, enhances antioxidants in the body, plus they are great for hair and skin.

Ingredients
  

  • 1 cup Red lentil
  • 1 large Sweet potato
  • 1 small Zucchini
  • 2 cups Lettuce
  • 1 cup Celery
  • 1 medium Onion red
  • 1 medium Avocado
  • 1/2 cup Parsley
  • 1/2 cup Nuts
  • 2 tbsp Red pepper powder
  • 1 tbsp Chili flakes
  • Salt & Pepper

Instructions
 

  • Preheat oven at 200 ย ยฐC
  • Peel sweet potato and cut them with zucchini and onion inone inch squares. Place baking paper on baking sheet add sweet potato,zucchini, onion and sprinkle some salt & pepper, red pepper powder witholive oil. Let baked for 20 minutes.
  • Meanwhile, in a sauce pot heat place red lentil with saltwater. Bring to boiled then turn the heat on medium and let cooked 10 -12minutes. After red lentil is cooked, rinse under cold water and set to a side.
  • Cut Lettuce, celery and avocado in small.
  • Start your Buddha bowl with Lettuce then add all ingredientstogether, roasted sweet potatoes, zucchini, onion, red lentil, celery, nuts,parsley, place avocado on top.
  • Season with some salt & pepper and add some extra oliveoil on top.
  • Enjoy
